Grapes: The traditional varieties from the Douro. Soil: Schists. Vinification: The grapes were crushed and underwent an extended maceration on skins in order to obtain a rich wine both in colour and flavour. Fermentation was arrested by the addition of grape alcohol in order to produce a naturally sweet wine.

Previously referred to as 'Australian Tawny Port', our Australian Tawny shows the classic caramel treacle colour of a tawny style. Delicious aromas of spicy fruit cake and raisins are immediate on the nose, while on the palate this fortified is luscious and intense with caramel and aged rancio flavours - a direct result of blending mature and younger wines. The wood maturation of this wine enhances the developed qualities of richness and intensity. Christian Brothers Tawny Port 750ml

Cockburn's Fine Ruby is a blend of young wines from various years, aged for three years in wood casks and bottled after filtration. With rich, full-bodied flavours of raspberry, plum and spice, it retains the red colour and fruit flavour of youth, and is ready to drink when bottled, offering a rich, fruity, sweet taste. Fine Ruby pairs well with blue veined cheeses, rich chocolate desserts - especially with raspberry sauce - or simply squares of dark chocolate and toasted walnuts.
Fine Tawny is aged for about the same amount of time as Cockburn's Fine Ruby (about three years), but in smaller barrels to hasten aging to a reddish amber (tawny) color and to develop a smoother, nutty flavor. Many of these wines are also left "upriver" in the Douro Valley to age in the hotter climate (the "Douro Bake"), thus speeding the aging process and lightening the color. Tawny port is bottled filtered and ready to drink. Tawny is a smoother, more mellow drink than Ruby.
