Saltram Mamre Brook Cabernet Sauvignon 750ml

Mamre Brook is the name of the original homestead built in 1844 on Saltram Estate, near Angaston in the Barossa. The Cabernet Sauvignon for this wine was sourced from low yielding mature vineyards in the Barossa.Individual parcels of fruit were crushed and destemmed and then fermented on skins for up to 10 days. During fermentation the wines developed intense colour and fine, silky tannins. The wines were then matured in oak for 22 months before final blending and bottling.

Mamre Brook is the name of the original home, built in 1844 at the Saltram Estate near Angaston in the Barossa. Shiraz fruit was selected from low yielding, mature vineyards in the Barossa. Fruit was crushed and de-stemmed before fermentation on skins took place in a variety of different fermenters. Fermentation developed intense colour and extracted soft tannins from the skins. The wine was matured in seasoned and new French and American oak barrels for twenty two months. Individual vineyard parcels were kept separate throughout the winemaking process and blended just prior to bottling.

Pillar Box Reserve Cabernet Sauvignon 750ml

The Reserve Cabernet Sauvignon shows lifted wild berry fruit and brambly aromas, along with dusty cocoa and earthy tones. An attractive and true varietal expression of Cabernet Sauvignon from Padthaway. The palate begins with ripe blackberry fruit and hints of roasted beetroot which devel-ops in the mid palate. Savoury tobacco leaf, leather and toasty nutmeg spice compliment the fruit and add layers to the wine. A well balanced wine, with a long palate and chewy yet balanced tannin structure. THE TECHNICAL DETAILS Winemaker: Renae Hirsch Composition: 100% Cabernet Sauvignon Alcohol: 14.5% Vinification: Each vineyard destined for the Pillar Box range of wines is harvested when flavour ripe, then fermented on skins for around 5 days. The free run and press-ings fractions are separated and all parcels are kept separate throughout the vinifica-tion process. The wines are matured for a period of 12 months and 30% of the wines are matured with oak; we use 90% French Oak & 10% American Oak. At the end of the Maturation process a small fraction of each of the best Cabernet parcels is drawn off and blended to make the Pillar Box Reserve Cabernet.
