It’s spicy but with great citrus, a truly modern Australian gin. Four Pillars Rare Dry Gin captures the essence of contemporary Australia’s heritage in Europe and Asia. We’re using whole oranges which is unusual but Australian citrus is highly aromatic and supports the spicier botanicals like cardamom. The cinnamon and star anise add rich fruitcake tones, the Tasmanian pepperberry leaf provides warmth rather than heat, and the lemon myrtle is a beautiful alternative to lemon peel.

Four Pillars Bloody Shiraz Gin 700ml

In 2015 we combined our Rare Dry Gin with some of the best Shiraz grapes in Australia to create our Bloody Shiraz Gin for the first time. And now each year we steep Yarra Valley Shiraz grapes in gin, and after eight weeks we press the fruit before blending with more Rare Dry Gin. The 2018 release has great depth of colour and is much richer and more vibrant than 2017, carrying really beautiful purples and reds to bottle. Flavour-wise it’s showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carries those grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish. The ABV is 37.8%, unlike Sloe Gin where the alcohol less than 30%. So it packs a punch and is ideal in a range of cocktails. The gin is unfiltered, so it will develop secondary fruit characters beyond two years, and is best consumed within two years of vintage.

Waikato Draught 24pk btls 5% 330ml

Waikato draught was first brewed in 1925 and has been one of the biggest selling beers in the region ever since. Willie the waiter, a cartoon character used to promote the beer was created in 1945. At this time Waikato Draught was selling 400,000 gallons of beer each year and was being brewed from the Innes Family Waikato Brewery. In 1961 New Zealand Breweries(later to become Lion Nathan) acquired Waikato Breweries from CL Innes.The brewery stayed open in Hamilton until 1987 when it was closed down. From this time production of Waikato Draught was moved to the Lion Breweries in Newmarket, Auckland. The manufacturer claims that Waikato Draught has a strong malty flavour with a well-defined bitterness. They refer to a smooth and clean texture, and a hoppy and spicy aroma. The manufacturer also suggests that the robust ale flavours are a good match with hearty meat and potato meals.

After experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes (alongside our beautiful organic oranges) for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity. The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then turmeric adds weight to the palate and a fresh but earthy quality, not unlike dill. The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls it all together. The palate is intense - sweet and juicy - but it is still very clean.
